Trim
Snap or cut away the woody ends and pat the stalks dry.

Toss with olive oil, salt, and pepper. Arrange mostly in one layer.

Cook at 390°F for 6–8 minutes, shaking once, until the tips darken and the stalks bend easily.

Squeeze lemon over the top and add parmesan if you want the dinner-party version.
