Air-Fryer Cheese & Ham Toastie
Sourdough buttered on the outside, packed with a mustard-spiked cheddar-and-parmesan mix, two slices of ham, fresh chives. Air-fried at 380°F for six minutes — comes out with the bread the colour of toffee, the cheese oozing at the edges. The toastie maker, retired.
The toastie is one of the most heavily contested sandwiches in British food. There are factions: the sealed-edges Breville-Snack-N- Sandwich-Toaster school, the open-faced welsh-rarebit-adjacent school, the panini-press school, the deep-frying-it school. All of them are correct depending on context. The air-fryer toastie joins the canon as the laziest possible high-quality version: no pressing, no flipping, no specialist equipment.
The technique is the same as for a stovetop grilled cheese, with the heat applied from all sides at once. You butter the outsides of two slices of sourdough, fill with cheese and ham, slide into the basket, flip once at the halfway mark. Six minutes later, the bread is mahogany on both sides and the cheese has oozed enough to weld the bread together. No fight with a pan, no babysitting.
The cheese here is where the recipe earns its keep. Sharp cheddar is the structural component (the melt), grated parmesan adds salt and depth, a teaspoon of Dijon mustard mixed in adds the slight tang that keeps the whole thing from being one-note. Fresh chives stirred through give green flecks and a faint allium note. Two slices of quality ham (not the wafer-thin sliced stuff — proper ham, ideally honey-roast or maple-glazed).
