Air-Fryer Club Sandwich

Three-tiered club: toasted white bread, mayo, sliced chicken, crispy bacon, cheddar, lettuce, tomato, repeated. The bacon and bread both go through the air fryer; the chicken can be leftover or freshly grilled. The diner classic, stacked tall, cut on the diagonal, eaten with both hands.

The club sandwich is one of those dishes that's somehow more than its parts. The recipe is just bread, chicken, bacon, lettuce, tomato — ingredients you can find in any kitchen — but the particular tradition of building it (three slices of toast, two fillings stacked between, cut into four triangles with a toothpick through each) elevates it into a specific category of food. The midcentury hotel lobby sandwich. The 2am diner. The order you make when you can't decide what else to have.

The air fryer is genuinely useful here for two of the three critical components. The bacon: 8 minutes at 400°F, no splatter, no pan to wash. The bread: 2 minutes at 380°F per side gives proper diner-toast crisp, deeper colour than a toaster manages. The chicken: use leftover roast chicken if you have it; if not, season a chicken breast and air-fry it for 12 minutes at 400°F, then slice. The total operation is twenty-five minutes start to finish.

    Cook the chicken (if not using leftover)

    Rub the pounded chicken with oil, salt, paprika, and pepper.

    Arrange bacon strips in a single layer in the air fryer basket.
