Air-Fryer Fudgy Brownies

Brownies with the crackly meringue top and the dense, fudgy middle — the structurally correct version, debated about endlessly on cooking forums — made in a small square pan in the air fryer. Twenty minutes start to finish, eight servings, the way to handle a Tuesday afternoon chocolate craving.

The fudgy brownie versus cakey brownie debate has been carried out in cooking magazines, on internet message boards, and across kitchen tables for at least fifty years. The fudgy-brownie partisan position is correct: a brownie should be dense, slightly chewy, and have a glossy crackled top that comes from emulsifying sugar into melted butter and chocolate. A cakey brownie is just a brown cake, and we already have cakes for that.

The air fryer is unexpectedly good at fudgy brownies. The ceiling-heat effect that worked for the cookie pie applies here too: the top sets quickly into a thin crackled meringue layer while the middle stays barely-set and ultra-fudgy. The cook time is shorter (about 20 minutes vs. 30+ in the oven), which makes fudgy brownie territory easier to hit because you've got less margin between underdone and overcooked.

The photo shows the test of a properly made brownie: nine cut squares arranged in a 3x3 grid on parchment, each one with a visibly cracked top (the meringue layer), shiny in places, with fudgy dark interiors visible at the cut edges. The crackled top is the signature; if your brownies don't crack, you didn't beat the sugar into the wet ingredients long enough.

A note on the chocolate: use real chocolate (a 70% dark bar, chopped) plus cocoa powder. Cocoa-only brownies don't have the fudgy density; chocolate-only brownies don't have the deep cocoa flavour. The combination is non-negotiable.
