Air-Fryer Herb-Lemon Cauliflower with Shrimp Skewers

Cauliflower florets and shrimp on skewers, both air-fried together with garlic, parsley, lemon zest, and red pepper flakes. The protein-plus-vegetable dinner that's a complete meal in twenty minutes — Mediterranean-bright, gluten-free, almost embarrassingly easy.

This is the dinner I make on the nights I want something that feels like effort but actually isn't. Cauliflower and shrimp cook at the same rate in the air fryer (about 10 minutes), so you toss them both with the same lemon-garlic-parsley dressing and cook them together. The cauliflower goes nutty and charred at the edges; the shrimp pick up the herb-flecked oil and turn pink and curled. The whole thing tastes Mediterranean-bright and feels intentionally composed rather than thrown together — which it absolutely was.

The cauliflower technique is worth knowing on its own. Florets tossed in oil and air-fried at 400°F for 10–12 minutes develop the same browned-and-tender quality as oven-roasted cauliflower, but faster, in a single basket, with cleaner edges. The high heat pulls moisture off the surface quickly so the florets caramelise rather than steam.
