Build packets
Toss sausage, potatoes, pepper, onion, oil, and seasonings. Divide among foil sheets and top each with butter.

Seal
Fold into tight packets, leaving a little room for steam.

Air fry
Cook at 380°F for 22–25 minutes, turning once, until potatoes are tender.

Brown optional
Open packets and cook 3 minutes more if you want browned edges.
