Air-Fryer Lemon-Parmesan Asparagus

Asparagus tossed in olive oil with lemon zest, garlic, salt, and a generous shower of grated parmesan, air-fried six minutes at 400°F. The tips go slightly charred, the parmesan melts into the surface, the lemon brightens the whole thing. The fastest side dish on the collection.

This is the side dish I make when something else is taking all my attention. Boil pasta? Air-fry asparagus while it cooks. Roast a chicken? Asparagus in the basket for the last 7 minutes of the chicken's rest. Steak in a pan? Asparagus in the air fryer parallel to the pan. The whole recipe is twelve minutes — most of them unattended — and produces something that looks like restaurant plating with about a 90-second active commitment.

The technique is the simplest in this entire collection. Trim the woody ends. Toss with olive oil, lemon zest, minced garlic, salt, and grated parmesan. Air fry at 400°F for 6 to 8 minutes, depending on thickness. That's the whole recipe. The parmesan melts onto the surface of the spears and bakes into a thin golden crust at the tips; the lemon zest oils up and perfumes everything; the garlic mellows.

A note on the parmesan: real Parmigiano-Reggiano makes a meaningful difference here. The pre-grated stuff sold in a plastic shaker won't melt the same way — it's processed with anti-caking agents. Buy a wedge, grate it yourself, use what you need, wrap and refrigerate the rest. It keeps for months.

For thin asparagus (pencil-thickness), reduce the time to 5 minutes. For thick asparagus (the size of your thumb), 9 minutes and check for tenderness with a knife tip.
