Air-Fryer Mozzarella Sticks

String cheese sticks, twice-dredged in seasoned breadcrumbs, frozen solid, air-fried at 400°F for the shortest possible time so the cheese melts but doesn't leak. Served with marinara. The TGI-Friday's appetiser, made better, at home, in seven minutes flat.

The mozzarella stick is a hard appetizer to make well at home because of one specific failure mode: cheese leakage. If the breading isn't thick enough, or the cheese isn't cold enough, or the cooking time is even slightly too long, the mozzarella melts faster than the crust can hold it, and you end up with a basket of empty breadcrumb tubes and a layer of welded cheese on the floor of your air fryer. Years of frustration.

The fix is two-part. First, the double dredge: each stick gets flour, then egg, then breadcrumbs, then egg AGAIN, then breadcrumbs AGAIN. This builds a thick, rugged crust that holds the cheese in during cooking. Second, the freezer step: the breaded sticks must be frozen solid (at least 45 minutes, ideally 2+ hours) before they hit the air fryer. The cold core gives the crust time to crisp and brown before the cheese melts.

Use string cheese (the snack-pack kind) — it's the right shape and size and crucially uses low-moisture mozzarella which holds together better than fresh.
