Egg-Fried Vegetable Rice
Day-old jasmine rice, scrambled egg, soy, sesame oil, sliced carrots, red cabbage, mangetout, finished with spring onion and a fresh chilli. The takeaway side dish made the main event, in fifteen minutes flat, in one pan.
Egg-fried rice is the dish where leftover rice goes to prove itself. Fresh rice steams; day-old rice fries. The starch on the outside of each grain dries out overnight, and that dried surface is what allows the rice to take on the lacquered finish and slight chew that turns a side into a meal.
The rule is therefore: never make this with rice you just cooked. Cook it the night before, spread it on a tray, refrigerate uncovered. Or buy a pouch of microwave rice and tip it into the fridge for an hour before using — same effect, faster. Hot freshly-steamed rice will steam in the pan and turn to mush.
The technique is wok-style stir-frying: very high heat, fast movement, ingredients added in stages. Eggs first (scrambled and pushed aside), vegetables next (carrots, red cabbage, mangetout — anything crunchy), rice last with the soy sauce. Total cook time is 8 minutes once the pan is hot.

Prep everything first
Stir-frying moves fast — get the rice broken up, the vegetables

Scramble the eggs
Heat 1 tbsp of oil in a large wok or skillet over medium-high.

Stir-fry the aromatics
Add the remaining 1 tbsp oil to the same pan over high heat.

Add the vegetables
Add carrot ribbons, red cabbage, and mangetout. Stir-fry hard

Add the rice
Tip in the day-old rice and break up any clumps with the spatula.

Sauce
Drizzle in both soy sauces, sesame oil, white pepper, and rice

Fold in the egg
Return the scrambled egg to the pan, breaking it into smaller

Divide between two bowls. Top with spring onion greens, sliced
