No-Bake Cheesecake Yogurt Cups

The no-bake cheesecake is a small culinary loophole. The full cheesecake — the one that requires a water bath, an hour at 325°F, and an overnight rest — is a project. The no-bake version is twenty minutes and tastes about 85% as good, which is a remarkable percentage for a recipe that requires no oven. The trick is that whipped cream cheese + Greek yogurt + a little sugar approximates the texture of cheesecake closely enough to fool most people, and the graham cracker crumb base does the rest of the heavy lifting.
These mason-jar versions are the meal-prep adaptation. Make four on Sunday, eat one a day through Thursday. The structure is: graham cracker crumb pressed into the bottom (the crust), a generous layer of sweetened cream-cheese-and-yogurt mixture (the filling), fresh berries on top (the garnish that makes everything look intentional).
