Spicy Bean Jacket Potatoes
Big baking potatoes air-fried until the skins crackle, split open and topped with spiced-up baked beans (a can of beans, smoked paprika, chipotle, a glug of barbecue sauce), grated cheddar, and pickled jalapeños. The pub-lunch classic, made spicy enough to be interesting.
The jacket potato with baked beans is the foundation stone of British weeknight cooking. A potato in the oven, beans on the hob, butter and grated cheese, salt and pepper, eat with a fork on the sofa. The recipe doesn't need defending; it's a category of food.
This version takes the same logic and pushes it just slightly — the baked beans are not from-the-can-with-nothing-added, but from-the-can-stirred-with-smoked-paprika-and-chipotle-and-bbq- sauce. The transformation takes 5 minutes of work and turns the beans from "soft sweet sauce" into "smoky, slightly hot, layered flavour." The pickled jalapeños on top are the final pop.
The air fryer cuts the potato cook time roughly in half — about 45 minutes for a 12-oz baking potato at 400°F vs 75–90 in a conventional oven. The skin gets blisteringly crisp (rub with olive oil and sea salt before cooking, this is non-negotiable). The inside stays fluffy.
